Gnocchi alla Sorrentina

As the Autumn rolls in and the daylight fades sooner, we all want to cosy up after a long day’s work and eat something just as warming to keep the chill away and satisfy our tummies. Italian’s don’t have many hearty meals as their weather is usually quite mild most of the year, however they do have a dish called Gnocchi alla Sorrentina which takes its name from the City of Sorrento, Naples. This dish is a rich tomato and cheese oven baked heaven made using the ever-versatile gnocchi partnered with wonderful mozzarella, fresh basil and topped with a sprinkling of parmesan cheese. The ultimate oven baked warming comfort food from Italy.

 

 

Diforti have put together the recipe that is quick and easy to put together for everyone in order to achieve the perfect Gnocchi alla Sorrentina in your kitchen at home. The beauty of dishes like this as well is, you are free to improvise and add to this recipe to make it your very own Gnocchi alla Sorrentina masterpiece! Some suggestions to add are Nduja, chilli oil, chopped chorizo, vegetables of your choice and much more, the sky is the limit!

STEP ONE: Pre-heat the oven 190C, gas mark 4. Fill a large pot with water and bring to the boil. Add in the Gnocchi and boil for 2 MINS until cooked and floating at the surface.

 

 

STEP TWO: Drain the gnocchi and place into the ovenproof dish. Stir in the Salsi cherry tomato sauce, a pinch of salt & pepper, drizzle with Olive Oil and add your sliced or shredded mozzarella. Mix through in order to distribute mozzarella evenly throughout.

 

 

STEP THREE: Top the gnocchi with grated Parmesan and Fresh Basil and pop into the oven.

STEP FOUR: Cook in the oven for 15-20 MINS until cheese is golden brown on top and bubbling nicely.

STEP FIVE: Serve equally onto plates and garnish with grated Parmesan & Fresh Basil and enjoy!
