With Vermouth Classico del Professore we have recreated the vermouth style fashionable in Italy at the end of the 18th Century. Its muscat wine content is supplemented by aromatic and medicinal herbs gathered on the alpine heights around Turin as well as a great many traditionally-used exotic spices. The idea behind our classico was to reappropriate vermouth’s true place as a ready-to-drink aperitif. It is a living, evolving product from the infusion tank to the bottle. Amber coloured, its complex bouquet is a mixture of flowers, ripe fruit and spices such as vanilla, cloves and mace. On the palate, a subtle tactile sensation balances perfectly with sweetness, crisp citrus and cinnamon notes and a delicate quinine bark and gentian finish.
