Talagani is a greek soft cheese made with a combination of sheep’s and goat’s milk that is similar to halloumi but with a softer texture. Despite this it retains its shape when cooked whilst still keeping its soft interior that melts in the mouth. It has a rich creamy flavour with a delicate saltiness and subtle mint undertones. It is best lightly grilled and served with roasted vegetables or alongside a salad with some olive oil to garnish.
