Our yellowfin tuna roe is collected from the water of Sicily. We lightly press and cure the roe in salt being drying. Diforti’s Bottarga has no additives or preservatives, just a sprinkling of salt, and is grated for ease of use. Bottarga is an authentic Italian food and has an intense and salty flavour similar to that of caviar. Try sprinkling over pasta as an enhancement or create a paste using lemon juice and olive oil.
