Spicy Tomato Cream & Italian Sausage Rigatoni

The Italian Sausage (Salsiccia as is known in Italy)  is such a versatile ingredient, it comes in many varieties and can be used in a multitude of recipes. The most common variations of Italian sausage are either sweet, mild, with fennel, with purple/sweet basil or with chilli/hot pepper added. It is mainly made up of pork with the addition of fresh ingredients depending on which variety you are creating, it is also not too uncommon for the Italian sausage to feature red wine as well. The type of sausage variety you will get in Italy will depend upon which region you are in. The further South you go, the more spicy. So expect to eat something with one hell of a kick In Sicily!

STEP ONE: Fill a large pot with water and bring to the boil. Add the Rigatoni and cook for 12 MINS.

STEP TWO: While the pasta is boiling, put some Olive Oil on heat in a pan and fry the Italian sausage and Pancetta until brown. Then add the chopped garlic & onion and continue to cook for another 2 MINS.

 

 

STEP THREE: Next add the 250ml measure of White Wine and Sun-dried Tomatoes and turn on to simmer until the liquid is reduced to about half (10 MINS APPROX).

 

 

STEP FOUR: Once you are ready to, add the cream, spinach, chilli flakes and salt & pepper and mix well until the spinach is wilted. Then you can grate in the Parmesan to thicken the sauce.

STEP FIVE: Drain the Rigatoni and then add into sauce mix and stir together. Heat for a further 2 MINS and serve once completed.
