Smoked Scamorza is a semi-soft Italian cheese that is very similar to mozzarella but which is aged which means it is firmer and drier with a more pronounced flavour. The smoked variety of Scamorza gets its smoky flavour from exposure to smoking straw for 10 to 15 minutes. The traditional pear shape of the whole cheese comes from the process of hanging the cheese by a length of string.
